Maple Syrup has been produced in Bill Ingles’ family for more than a hundred years as a side line to dairy farming. Bill followed the family tradition as a dairy farmer and maple producer. After retiring from dairy farming Bill, and his wife Ruth, purchased a 50 acre hobby farm in Richfield Springs, New York in 2007 with a nice maple bush. In 2008, we started out with 700 taps. For the 2012 season, we added more taps for a total of 1,140 taps. We now have about 1,500 taps and other maple producers bring us sap. About 98 percent of our syrup is sold retail.
Besides doing the maple syrup Bill makes about 8,000 bales of horse hay which is usually sold out of state.
We use a state of the art 2 x 8 Leader Evaporator with a steam away to produce our maple syrup. We have a reverse osmosis machine that takes out a lot of water from the sap. It saves a lot of boiling time.
